Aromatic Chicken

This recipe is a cross between a tagine and a mild chicken curry. It’s a mild warming dish which is perfect for when you need something cosy for dinner.

Ingredients

8 pcs boneless skinless chicken breasts, cut into chunks
1 tsp cumin
1 tsp turmeric
1 tsp ground coriander
1/2 C cornflour
1 Tbsp brown sugar
1 tsp sweet orange marmalade
1 Tbsp fresh rosemary, finely chopped
1/2 C raisins or chopped dates
2 C stock (vegetable or chicken)

Method

1. Mix spices with cornflour. Coat chicken in this mix and fry gently in a wide saucepan until chicken is browned.
2. Pour stock over chicken. Add sugar, rosemary, raisins/dates, and marmalade. Bring to the boil then reduce heat and simmer, covered, for 20-30 minutes until chicken is cooked.
3. Serve with rice or mashed potatoes.
