Who doesn’t love chocolate cookies? Especially chocolate cookies with all the chocolately goodness of Dutch cocoa, melted dark chocolate, and chocolate chips! All balanced by a lovely hint of salt to round out the flavour. Mmmm…
Ingredients
125g dark chocolate, melted
150g plain flour
30g cocoa, sifted
1 tsp baking soda
1/2 tsp salt
135g dairy free margarine
75g brown sugar
50g caster sugar
1 tsp vanilla extract
1 egg
30g dark chocolate chips
Method
1. Heat oven to 170 °C.
2. Mix flour, cocoa, baking soda, and salt.
3. In another bowl, cream margarine, brown sugar, and caster sugar. Add melted chocolate to this mix.
4. Beat in vanilla extract and egg, then add dry ingredients and chocolate chips.
5. Scoop out spoonfuls of mixture, place on lined baking tray and bake for 15-18 minutes.
