There it was, sitting on the bench, calling to me. A whole block of delicious white chocolate, waiting to be eaten. I needed to use it up before I gobbled the whole thing myself, so I decided to make something sweet to take to work. It worked perfectly – these brownies were very popular at work and they disappeared in a flash! I’ll definitely be making them again.
Ingredients
1/2 C margarine
225g white chocolate
3/4 C white sugar
2 eggs
1/2 tsp salt
1 tsp vanilla extract
1 C plain flour (I use Edmonds Gluten Free Plain Flour)
Method
1. Heat oven to 180°C
2. Melt white chocolate and margarine in a large bowl in the microwave.
3. Add the sugar, salt, vanilla extract, and eggs to the white chocolate and margarine. Stir until sugar has dissolved.
4. Add the flour and mix until combined.
5. Pour into a greased brownie tin and bake for 30 minutes. Test with a skewer to see when they’re cooked.
6. Leave to cool for a few minutes before removing from the tin.
7. Once cool, cut into bite-sized pieces and sprinkle with icing sugar.
