Chorizo Chicken

Fragrant and juicy, this chicken is easy and comforting. It’s a tray bake filled with the irresistible yumminess of chorizo and pancetta. Equally good with a refreshing summer salad or with cosy winter vegetables!

 

Ingredients

8 chicken thigh fillets
1 x raw chorizo sausage, cut into chunky coins
8 white potatoes, cut into large chunks
zest of 1 orange
2 Tbsp olive oil
8 slices pancetta
1 Tbsp oregano

Method

1. Heat oven to 200°C

2. In a large bowl, combine zest, oregano, chicken, potatoes, and chorizo. Mix until the chicken is coated in the oil and herbs.

3. Spread the chicken out onto an oven tray. ensuring an even spread of chicken, potatoes, and chorizo.

4. Place one slice of pancetta over each chicken thigh.

5. Bake in oven for approximately 1 hour or until chicken is cooked and potatoes are golden.

Serve with a simple green salad or green beans. Yum!
